Tart Lemon Popsicles

These tart lemon popsicles are perfect for the warm summer days ahead!  The clean lemon flavor is refreshing and keeps you coming back for more.

I love the idea of pouring these pops into in an old fashioned mold and waiting 8 hours – then enjoying off a wooden stick.  Just like when we were kids.  These days I’m too impatient for all that!  For convenience and my instant gratification needs, I used the Zoku pop maker.  We have really enjoyed this little device.

For this recipe I was looking for something to fill my lemon appetite.  I wanted these to be pungent and real.  I tried to use minimal honey and to add some real zip I choose to put two slices of the whole lemon in there.  This adds a bit of bitter tartness that I adore.  You could opt out and replace the 2 slices with 1 T lemon zest.  This would give a more subtle lemon zip.

Tart Lemon Popsicles

  • Prep Time: 8h 10m
  • Total Time: 8h
  • Serves: 3

Ingredients

  • 1 juice of one lemon
  • 2 whole slices, lemon
  • 1 tablespoon honey
  • 1 cup water

Instructions

  1. In food processor pulse all ingredients until lemon is chopped up into fine pieces.
  2. Pour into popsicle molds and freeze overnight. If using instant pop maker follow manufacture instructions.
